Ari's Tri Color Pasta Salad

Pasta salads are one of my favorite dishes to make during meal prep, especially for those busy weekdays. They strike the perfect balance of being light, semi-healthy, and most importantly, delicious! You might think, "You work from home; it should be a breeze to find something to eat." But in reality, it’s not that simple. With only a 30-minute lunch break, you often find yourself spending more time preparing your meal than actually enjoying it. Unless, of course, you opt for a quick sandwich. My tri color pasta salad is simple and quick to make, so try this for your next meal prep or just for lunch in the park.

Ari's Tri Color Pasta Salad
Ingredients:
1 Box of Tri Color Rotini Noodles
2 Small Fully Cooked Ham Steaks
1 Bag of Mini Cucumbers
1/4 thinly sliced Red Onions (You can add more, if desired)
1 small container of Grape Tomatoes (You can keep them whole or sliced in half)
1-16oz Bottle of Italian Dressing
Grated Parmesan Cheese (optional)
Bacon Bits (optional)
Directions:
Cook your rotini noodles until they are al-dente
Drain your noodles and put them in a large mixing bowl
Pour a small amount of your Italian dressing, and mix well
Cover your bowl with a lid or plastic wrap and place it in the refrigerator for cooling
While your noodles are cooling, begin to cut up your ham and veggies into bite-sized pieces and place in a separate bowl
Once all of your ingredients are cut up, mix your ingredients with your noodles in the large mixing bowl
Then pour the remaining of your Italian dressing into the bowl and mix well (add as much or as little to your desired taste, I use the entire bottle)
Now that everything is well blended, wrap your bowl again to let it chill some more and for the flavors to marinate
~If you are meal prepping, you can put your pasta salad in your meal prep containers~
After 10-15 minutes, its ready to be served
Serve your pasta salad with toppings of grated parmesan cheese and bacon bits to enhance the flavor
