Ari's Salmon Bites w/ Cucumber and Tomato Salad

Are you a salmon lover like me? I think I have cooked salmon in so many different ways. One of my favorite ways to prepare salmon is to make salmon bites. My salmon bites can be paired with rice, mashed potatoes, or any side of your choice. As for me, I like to eat my salmon bites with my cucumber and tomato salad. I normally eat my salmon bites and cucumber and tomato salad for lunch, because its quick to make and its a light meal. This meal actually originated from me wanting salmon bites and a salad for lunch one day. When I went to prepare it, I noticed we had ran out of lettuce. I was a little bummed about it because I wasn't sure what I was going to eat with my salmon. Then I thought to myself, I have everything except lettuce, so I can still eat some veggies with it. That's when a lightbulb went off, and I created my cucumber and tomato salad. I had to be creative because I refused to just eat salmon by itself. The way I prepare my salmon bites, is also the way I prepare my regular portion cut salmon as well, when I'm cooking on the stove top. So if you don't want to make them into bite sizes, you can still use this recipe to make your salmon. I know many people may already know how to cook salmon, but if you don't, no worries you are in for a treat.


Ari's Salmon Bites with Cucumber and Tomato Salad


Ingredients:

  • Fresh salmon fillets (I recommend getting the skinless salmon)

  • Olive oil

  • 1 tsp Minced garlic

  • Lemon

  • Kinders "the blend" seasoning

  • Sazon

  • Creole seasoning

  • Complete seasoning

  • Black pepper

  • Smoked paprika

  • 1 bag of Mini cucumbers

  • 1 container of Grape tomatoes

  • Croutons (any flavor)

  • Salad dressing of your choice (I use Ranch or Italian dressing)


Directions:

  • First clean your salmon fillets and pat dry with paper towel

  • Next cut your salmon fillets into bite sizes and put them into a mixing bowl

  • Once all of your salmon fillets are cut into bite sizes, season your salmon bites with kinders "the blend" seasoning, sazon, creole seasoning, complete seasoning, black pepper, and smoked paprika; then mix well together (please note I lightly season my salmon bites with these variety of seasonings to avoid saltiness; but season to your liking); then put the bowl to the side

  • Next grease your skillet with olive oil and turn the stove top on medium high heat

  • Once your skillet is hot add your minced garlic and your salmon bites

  • While your salmon bites are cooking, this is a good time to make your cucumber and tomato salad (make sure to keep an eye out on your salmon bites and flip them as needed until they are cooked to your liking; I like a little crisp to my salmon so my cook time be a little longer)

  • Wash your cucumbers and tomatoes, then cut up your mini cucumbers and put them in a separate mixing bowl, after all of your mini cucumbers are cut, add your grape tomatoes and mix until the cucumbers and tomatoes are well blended

  • Next add your croutons and mix again; then put your bowl to the side

  • Once your salmon bites are done cooking, drain them on paper towel

  • After all of your salmon bites are done cooking, make your plate and drizzle some lemon juice over your salmon bites; then drizzle your favorite salad dressing over your cucumber and tomato salad
