Ari's Salmon Croquettes

The breakfast that always brings a taste of the South to my kitchen includes salmon croquettes, rice, eggs, and biscuits with syrup. You might wonder how I know about this. Well, as a young girl, my dad often took me to Mississippi to visit family, and each time we went, my grandmother and great-grandmother would teach me a Southern dish to make. Salmon croquette breakfast was one of them; and they made their biscuits from scratch. Although I still need to learn how to make homemade biscuits, I currently use canned biscuits when I recreate the salmon croquette breakfast. I vividly remember watching my grandmothers prepare this meal and the aroma of homemade butter biscuits. When it was time to eat, I looked at my dad in confusion because I didn't know what a salmon croquette was, but after the first bite, I never forgot it. Now, I make them and my family loves them, but it's a special breakfast we have occasionally, because it's a bit time-consuming; especially if you use canned salmon in the traditional style with bones. Most of the time, I purchase boneless canned salmon to save on preparation time. So, if you decide to try my salmon croquettes, you can enjoy them for breakfast like I do, have them for lunch with a salad, or serve them for dinner with mashed potatoes. No matter how you choose to enjoy your salmon croquettes, they will be delightful and delicious either way.

Ari's Salmon Croquettes Recipe

Ingredients: (Makes 6 small croquettes)

  • 2 - 5oz can of boneless pink salmon

  • 1/8 cup chopped onions and green peppers mix

  • 1 egg

  • Italian breadcrumbs

  • 1-2 cups of cooking oil (depending on the size of your skillet)

  • Mustard

  • Garlic powder

  • Onion powder

  • Black pepper

  • Natures seasoning

  • Complete seasoning

  • Sazon

  • Seasoning Salt


Directions:

  • First open your cans of pink salmon and drain all of the liquid

  • Then pour your pink salmon into a mixing bowl

  • Next season your pink salmon to your liking with: garlic powder, onion powder, black pepper, natures seasoning, complete seasoning, sazon, seasoning salt (use very little of this), and mix well

  • Once that is well mixed, add a drizzle of mustard and stir

  • Then add your egg, chopped onions and green peppers mix; then stir and mix well

  • Once that is well blended, add 1/4 cup of breadcrumbs (might have to add a little more) and mix

  • Pour your cooking oil into your skillet and set stovetop to medium high

  • While your cooking oil is heating up, take your mixture and start to make your salmon croquettes

  • After you have formed your salmon croquette patties, coat your salmon croquettes in more breadcrumbs

  • Once your cooking oil is hot and ready, cook your salmon croquettes until they are golden brown on each side
