Wondering on what meals to make during the week? Well, if you are a fan of gravy like me, my smothered pork chop dinner is a hearty meal to consider preparing during the week. This dish holds a special place in my heart, as it is inspired by the cherished memories of my childhood. I remember the afternoons when I would walk home from school, feeling a mixture of being tired and hungry; and head straight to my grandmother's house. The moment I walked through her door, I was greeted by the smell of a good home cooked dinner, that she had lovingly prepared for my cousins and me. One of the standout meals from those days was her famous smothered pork chops, served with mashed potatoes and green beans or sweet corn. Coming home to a home-cooked meal was always the highlight of my day, especially since I was never particularly fond of the school lunches. Now when I create this nostalgic meal for my kids, I can't help but think of my grandmother every time I prepare it. So, if you're looking for a comforting and fulfilling dinner option, consider making my smothered pork chops; you will enjoy this meal. Although, I make this dinner with rice because of my kids liking; its very good served with mashed potatoes as well.

Ari's Smothered Pork Chop Dinner

Ingredients:

  • Bone in Pork Chops

  • Rice

  • Green Beans (Can, Frozen, or Fresh)

  • Cooking Oil

  • Sliced onions (optional)

  • Sliced bell peppers (optional)

  • Natures Seasoning

  • Smoked paprika

  • Black pepper

  • Onion powder

  • Garlic powder

  • Complete seasoning

  • Sazon

  • Worcestershire sauce

  • Low sodium Soy sauce

  • Flour

  • Water

  • Butter

Directions:

Note: Cook the rice according to the package instructions or your preferred method. Once cooked, set it aside until serving.

  • After washing your pork chops season them with: natures seasoning, smoked paprika, black pepper, onion powder, garlic powder, complete seasoning, and sazon

  • Pour 2 - 3 cups of cooking oil in your frying skillet ( you may need more due to the size of your skillet) and heat cooking oil on medium-high

  • While you are waiting for the cooking oil to heat up, this is a good point to start preparing your rice and green beans (Add seasoning to your green beans so they won't be bland)

  • Once the cooking oil is hot and ready to fry; coat your pork chops with flour on both sides and begin to fry them until they are all completely fried

  • Now that all of your pork chops are fried, pour out the cooking oil from the skillet but keep the crumbs

  • Place your skillet back on the stove and melt 2 Tbsp of butter on medium heat

  • Then add your sliced onions and sliced bell peppers

  • Lightly season your veggies with natures seasoning, complete seasoning, red pepper flakes (optional; use only if you want more of a spice), and black pepper then stir

  • Next add 1/3 cup of flour and 1 cup of water and mix altogether

  • Once everything is well blended, get 1 more cup of water and gradually add that in until you get your desired consistency for your gravy

  • Now you can add seasoning to your gravy to get your desired taste and stir

Note: Your gravy will be a light color, to make it darker you can add low sodium soy sauce and/or Worcestershire sauce; if you do, you may need to add more seasoning to adjust the taste back to your liking

  • Place your fried pork chops in a bake dish then pour your gravy over all of your pork chops

  • Then put your smothered pork chops in the oven on 375 degrees for about 10 minutes

  • Take your smothered pork chops out of the oven and let it rest for about 5 minutes before serving

Note: Biscuits definitely compliments this dinner

Enjoy!!
